  • 2 lbs (900g) beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 celery stalks, chopped
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 2 bay leaves

  • 2 tbsp flour
  • 2 tbsp butter
  • Fresh parsley for garnish

  1. Prepare the Beef:
