Chermoula Carrot Salad
This is a flavorful Moroccan-style cooked salad that I really love. You can serve it as a starter or a side dish!
Typically, carrots 🥕 are boiled before adding the spices, but I do it differently, and I find that they are much more flavorful this way! Here’s the recipe:
Ingredients:
- Carrots
- 2 tbsp chopped parsley and cilantro
- 2 garlic cloves
- ½ tsp cumin
- 1 tsp paprika
- Salt & pepper to taste
- Olive oil
- Juice of half a lemon
Instructions:
- Peel the carrots, cut them in half lengthwise, and remove the core. Then, chop them into small pieces.
- In a saucepan, add the carrots, olive oil, spices, crushed garlic, chopped parsley and cilantro, and lemon juice.
- Stir well, cover, and cook over low to medium heat, stirring occasionally, until the carrots are tender.
- Serve warm or cold.
