Vegetable Tagine

Ingredients for Vegetable Tagine:

  • 2 potatoes
  • 1 carrot
  • 1 tomato
  • 1 zucchini
  • 1 onion
  • 100g Green cowpea
  • ½ teaspoon of turmeric
  • ½ teaspoon of paprika
  • ½ teaspoon of salt
  • A pinch of black pepper
  • 2 tablespoons of olive oil
  • 1 garlic clove
  • 1 level teaspoon of ginger
  • 1 tablespoon of chopped parsley
  • 1 tablespoon of chopped coriander

Instructions for Vegetable Tagine:

In a bowl, mix the turmeric, paprika, salt, pepper, mashed garlic, ginger, oil, and 2 tablespoons of hot water.
Peel the potatoes and cut them into quarters. Peel the carrot and cut it into sticks. Slice the tomato into rounds. Cut the zucchini into four pieces. Peel the onion and slice it.
Place the onion at the bottom of a tagine, then add the rest of the vegetables. Pour the spice mixture over them. Cover the tagine and let it cook for 30 minutes on low heat.
Add the green cowpea and let them cook for an additional 20 to 30 minutes, depending on the size of the vegetable pieces.
At the end of cooking, add the chopped parsley and coriander and serve the tagine immediately with bread.

Tip 1: Carrots usually take longer to cook. For even cooking, you can cut them into smaller pieces than the other vegetables.
Tip 2: To prevent the vegetables from sticking to the bottom of the tagine, place a layer of coriander or parsley stems before adding the onion slices.
